Since 1997, the dairy in the small village of Strigleben has been processing milk from East Friesian dairy sheep into various types of cheese. Milking begins in April, once the lambs are old enough and no longer require all the milk. From then until October, soft, semi-hard, and hard cheeses are produced using artisanal methods—all made from raw, organic milk. The feed—hay, alfalfa-clover-grass mix, and oats—is grown in accordance with the guidelines of the organic farming association Biopark e.V. (DE-ÖKO-021).
